Abundant Harvest: June 6, 2011
Welcome to our second harvest of the 2011 Growing Season. We’ll have a selection of the following available at the market this week. Not all items will be available at all the markets.
Arugula
Green Garlic

We’ve had a busy week. We transplanted more than ½ acre of summer squash. We are looking forward to all sorts of shapes, sizes and colors ranging from pale green to brightest golden, round to scalloped, to plain ole dark green zucchini.
In addition, we’ve transplanted ¼ acre of Early Girl and Fantastic Hybrid! tomatoes. These tomatoes will be dryland farmed, which means they will receive no water, other than that supplied by Mother Nature, for the entire growing season.
How can we do that? First, start with just the right soil type. Then, prepare the beds just the right way. Follow up with lots of specialized cultivation to create a dust mulch. Finally, cross your fingers and hope for the best. It doesn’t always work. But when it does, mmmmmm.

How should you use your Arugala this week? . My menu includes pesto made with arugala, hazelnuts, olive oil and romano cheese. I’ll mix it with some wonderful fresh pasta and serve it with grilled tuna.
